This is definitely a no guilt sauce! :) I did not think it tasted weird, and you can eat as much as you want and know you don't have to work out extra the next day to burn off a ton of carbs and fat :)
I have added two variations to the recipe. The first one is with easy to find ingredients in most countries. You can add some grated parmesan to give it a yummy lift
The second option is strictly Vegan! :)

Ingredients and spices that need to be Take to make Cauliflower Alfredo Sauce:
- 6 cups cauliflower of florets
- 7 cups veggie stock water of or
- 2 tbsps butter
- 8 cloves large mashed to a paste
- 1/2 cup milk
- to taste Salt Pepper and
Instructions to make Cauliflower Alfredo Sauce
- Bring the stock or water to a boil. Add the cauliflower and cook until it is fork-tender
- While the cauliflower was cooking, saute the mashed garlic in some butter. Once it is fragrant but not brown, remove from the heat and set aside
- After the cauliflower is cooked, transfer the cooked cauliflower pieces to a blender
- I saved the cooking liquid and added a cup of it to the blender, and add the sauteed garlic,
- Milk and the salt & pepper
- Blend until the sauce is very smooth. You can add more of the stock/water you used to cook the cauliflower if its too thick
- Add to some freshly cooked pasta and serve straight away. If you have left overs for the next day and it ends up being too dry, add some milk or water or olive oil to loosen it up!
- Vegan version ingredients:
- 6 cups of cauliflower florets
- 8 large cloves mashed to a paste
- 1/2 cup non-diary milk of your choice (ex:almond milk)
- 1/2 tbsp olive oil
- 1/4 cup nutritional yeast
- 1 tbsp lemon juice
- Salt and Pepper to taste
- Same process with cooking the cauliflower and sauteeing the garlics as the above recipe
- In the blender add the rest of the ingredients and blend to a smooth paste
