- In a bowl add 2 cups of flour and 1/2 teaspoon salt. Add in butter cubes and using your finger tip resembling bread crumbs. Sprinkle 1 tablespoon of cold water at a time while mixing. Gather dough in a ball and divide in half.



- Shape in 2 flattened rounds and cling film it. Refrigerate for 45 minutes. Dough should be firm and pliable.
Preheat oven to 180 C.


- Remove the dough after 45 minutes and roll pastry round ( about 2 inches larger than upside down pie dish.
Place the round pastry in the pie dish and press the edges firmly around the edges and bottom.


- Spoon into pastry-lined pie dish. Dot with butter. Trim overhanging edge of pastry.
Roll other round of pastry. Place it on top over filling and trim overhanging edge.
Using a fork press the edges and seal.
With the left over dough you can make flower leaves etc using a cutter and press on top. Make indents with a fork so steam can escape.


- Bake 40 to 50 minutes or until crust is brown and juice begins to bubble through indents in crust. Serve warm if desired with ice-cream, custard, fresh cream or own its own. Enjoy.
