- Honey syrup
- 1/2 Cup Honey
- 1/4 Cup hot water
- Margherita
- 2 Lemons
- Sugar or salt (for the rim)
- 115 ml Mezcal
- 30 ml lime juice
- Fresh Rosemary for garnish
- Ice
Steps to make Burnt Lemon Mezcal Margarita
- Combine the honey and water to make a syrup. We won’t use all of it in this recipe but it’s a great alternative to simple syrup used in many cocktails


- Chop your lemons in half. Create two Lemon Wheels by slicing from two of the halves. Get a griddle pan to high and put the lemons on cut side down



- Once the lemons have browned set aside to cool. Once cooked juice the lemons

- Prepare two glasses by coating
The rim with sugar or salt... you choose! I prefer salt 😍. You can do this by rubbing a slice of lime around the rim and then dipping the rim in salt or sugar. Add some Ice to the glasses.

- Add the lemon juice, mezcal, lime
Juice, 45ml of honey syrup and ice to a cocktail shaker. Shake away! Then strain into your glasses.


- Top with the grilled lemon wheels and add your rosemary garnish. Enjoy the Smokey taste and think about those Mexican fire pits 😍🔥. Best enjoyed next to an open fire 😁
