  1. Peel potatoes and rinse well. Cut into chunks. Bring cut potatoes to a boil w/ 1tbsp of butter and a shake of salt.
  2. While the potatoes cook, preheat oven at 350 and mix ground meat with seasonings and crackers.
  3. Coat muffin pan with olive oil.
  4. Form ground meat mixture onto hand and place a pinch of shredded cheese in the center. Form into a ball and flatten into muffin pan.
  5. After all pans are filled, put in oven for 20-30 minutes. Then, remove potatoes from heat and drain water. Mash the potatoes and add remaining butter and half cup of milk/half & half/cream. Mix until smooth.
  6. Once the meatloaf is done, spread mashed potatoes over meatloaf muffins and serve.
  7. Enjoy!
